Yummy Potato Salad!

So I was doing my normal blog reading and came across this potato salad recipe. She called it Grandmas Potato Salad. You can find her original recipe here at Meatloaf and Melodrama. It sounded really good and we have a ton of potatoes we need to find something to do with. This was perfect but we added a few more things to it.

Ingredients
10 good sized red potatoes (small to medium)
2 stalks of celery (we used about 3 to 4)
2 hard boiled eggs (we used 3)
Mayonnaise (not miracle whip)
Salt and Pepper to taste
What we added
Bacon
Cheese
Red onion 
Add however much you want! 
I love love cheese so we added about 1/2 a cup and of course who does not like bacon so we added about 4 thick cut slices of it.

To prepare just really takes common sense
Peel your potatoes boil them, cool them, cut them up
chop up the celery
chop up the bacon after frying
peel and chop up the eggs and red onion
Mix it all together. 
Add as much mayo as you like as well as the cheese.
There you go you have some great tasting potato salad. I am not waiting for it to cool to eat with dinner tonight. I of course did some sample tasting so I know it is good stuff.

Unstuffed Cabbage Rolls

I decided to try this for dinner Thursday night. You can find the original recipe on my facebook page HERE

Most everyone in my household does not have an acquired taste for cabbage but me being raised the way I was, I love it. Pretty much anything from a garden I adore. I decided I did not care if they ate it or not I was going to make it. 

I did make a few adjustments, instead of using a real onion I just used the minced onion seasoning. I do not like peeling and chopping onions so I cheat. This is the only thing I changed and I loved it.


I ate it just the way it was, one of my step sons tried it and he liked it. The other one on the other hand could not unwrap his head around the fact it has cabbage in it he automatically disliked it. My fiance tried and like it but he decided to add a twist. Making it into tacos. He fried tortillas, added sour cream and cheese. I will admit it was good as well. 
This will be a repeat in this house even if it is just for me.

Cucumber Turkey Wraps

Today for dinner I decided to try something new. My middle kids happen to be a little overweight so I am trying to find some healthier meals for them to enjoy. I know this is not exactly really "dinner" material but I got to think outside the box every now and then.

I go to the grocery store with $20. I needed to buy the ingredients plus milk and pepsi (my addiction, my coffee)

 I'm on a budget so its all off- name brand stuff for us

The recipe calls for 1/4 cup of chopped cucumbers but obviously I don't measure and just go by my eye

I had way to many so I just placed the rest in a bowl of water and put away in the refrigerator. The kids will eat these up in no time.

The recipe calls for 4 tbsp. of cream cheese, well I just used the whole thing.

I added some onion powder and some cheddar cheese (not in the recipe)



Spread it out on flour tortillas, add turkey and roll up and cut. 
The final product. My son and I liked it but my daughter who is very very picky decided she didn't. Of course this girl does not like most things. 

But there you have it. By the way I got this off of pinterest :-)
